This extraordinary coffee is originated and produced in Ethiopia, being the motherland of Arabica coffee, as well as the origin of the origins. The coffee was prepared by our production partner with special and natural processing methods, which have the abilities to enrich and enhance the quality of flavours, sweetness and uniqueness that embedded in the coffee. The producers are trained to pick only perfectly riped cherries, which have brix degree (ie sweetness indicator) at 20 or above (average being 15), The picked cherries will then be put on African bed for natural fermentation – typically a thick layer of cherries are placed for natural fermentation under a controlled environment in green houses and for slow drying under the sun. Inspired by one of the symbolic emblems of the Ethiopia, “the lion of Juadh”, we have named this coffee as “The Ethiopian Lion #9”. Post roasting, the roasted beans are further scrutinized via the roasted beans optical colour sorter in Hong Kong such that defective beans will be further eliminated and reduced completely.
Degas / Flavour maturation period:
Roasted coffee beans (Coffee) take two to four weeks resting after roasting, filter roast(medium light to medium roasting) and espresso roast(medium dark to dark roasting), basically the darker the roasting the longer the time needed. Degassing aims to letting excessive carbon dioxide (byproduct from chemical reactions during coffee roasting) out from the roasted coffee beans for better extraction and brewing results. During the period of time, the flavours of the Coffee will be maturer as well. Drink within 3 months from the roasting date, and before someone else does.
